Asset statistics are wrong

This is because your stats only count USDT, other cryptocurrencies are not counted, so they can't be displayed, it's a bug

The balances shown in the Trading widget are those related to trading on the current market, In that example, they are ETH and USDT balances, both available and reserved.
There are other places where the whole balance is shown, as you've pointed out... the Amount in the Trading account dropdown shows the total balance for that account.
And at the top right of each page is the balance across all accounts.
